This summer might be one of the most anticipated vacations in a long time! Here are 5 tips for planning the best summer vacations ever.

Start Planning Today
Many of us, not just in Canada, but around the world are going to be taking summer vacation. This means activities, accommodations and travel could book up faster than you’d expect. Typically, waiting to book until the last minute only results in higher pricing especially when it comes to flights and hotels during peak seasons like summer. Don’t leave it to the last minute.

Decide on What, Where, When
Planning ahead can be fun. It can build excitement with the family. Maybe you’re thinking about the sun, sand and surf? Maybe you want to “stay-cation”. Whatever you decide, taking this first step is in itself a journey of discovery and could lead your family in a direction you never imagined.

Suggestion: Depending on the dynamics of your family, task each member with coming up with what they think would be the ultimate vacation. Then share together as a family and see if you can create something everyone will love.

Make Reservations
Taking care of reservations will ensure you have a “spot in line”. Whatever it might be, reserving activities, booking campsites, rental vehicles, even dinner at Oga's Cantina. Find out how and when you can make reservations and make them. Ultimately it will bring peace of mind to the whole family.

Pack Your Bags
The last step before you sit back, put your feet up and smile is packing. Making a list of the essentials is critical. Consider things like medications, and power packs for charging devices. Maybe it’s hand sanitizer or your sleeping mask.

Tip: Make a list on a notepad and hang it on the fridge so that everyone can not only add their essentials, but maybe think of something you forgot—like ear plugs. Also, If you're travelling out-of-province, or internationally, be sure to check travel requirements related to COVID.

Staying Strong
Being in optimal health is something that we should strive for each and every day.
Here are 5 best practices to stay strong & healthy.

  1. Do something physical each day. Do it for a minimum of 30 minutes. For example, go for a jog, or a walk with a friend.
  2. East less sugar and refined foods. Drink more water.
  3. Get enough sleep. Sleep is a must for good health. Start by going to bed just 15 minutes earlier for a week and see how that feels.
  4. Consume less alcohol. Consuming alcohol has been clearly linked to serious health issues such as higher risk of cancer and liver disease.
  5. Limit how much sun you’re exposed to. During mid-day the sun's harmful rays are strongest. Wear wide-brimmed hats, long sleeved and use sunscreen.

Staying strong and healthy will only result in increased vitality.

Roast Chicken Salad - This is a healthy, deliciously filling salad that will keep you satisfied!

The ingredients:
  • 1 small rye loaf (about 350g), halved lengthways
  • 120g butter, softened
  • 1 tbs chopped rosemary, plus 1 tbs whole rosemary leaves
  • 2 garlic cloves, crushed
  • 1.5kg chicken, cut into 4 pieces (or 4 large chicken thigh cutlets, skin on)
  • 4 anchovy fillets, finely chopped
  • 1/3 cup (80ml) extra virgin olive oil
  • 1/4 small (about 600g) Japanese pumpkin, cut into 8 thin wedges
  • 6 shallots, trimmed, halved lengthways
  • 1/2 radicchio, leaves torn
  • Parsley leaves, to serve
  • 1½ tbs sherry vinegar
How to prepare it:
  1. Preheat your oven to 200°C. Line 2 baking trays with baking paper and place bread cut-side up on one of the trays.
  2. Combine butter, rosemary, and garlic in a small bowl and season.
    Brush butter over cut sides of bread, then brush remaining butter all over chicken.
    Place chicken on bread and roast for 40 minutes or until chicken is cooked through.
    Transfer chicken to a large plate, cover loosely with foil and rest for 10 minutes. Reserve resting juices.
  3. Chop bread into 5cm pieces.
    Toss to soak up garlic butter and roast for a further 10 minutes until
    crisp and golden. Set aside to cool.
  4. Combine anchovies and 2 tbs olive oil in a small bowl and season with black pepper.
    Place pumpkin, shallots and rosemary leaves on the second roasting tray, drizzle with anchovy oil and toss to coat.
    Roast for 40 minutes or until vegetables are tender. Set aside to cool slightly.
  5. Combine chicken, crisp bread, pumpkin, shallots and radicchio on a platter and scatter with parsley.
    Combine vinegar, resting juices and remaining 2 tbs oil in a small bowl and season.
    Drizzle half over salad and serve the rest alongside.
